Introducing The Brinery
Zingerman’s calls The Brinery a homegrown Ann Arbor fermenter and says it bought more than 15,000 pounds of the kraut in 2024 for Reubens. The deli highlights Fair n’ By, Galaxy Rose, Curtido, Oh Gee kimchi, and tempeh for nutty flavor and meaty texture. — Zingerman's Deli
Headquarters and manufacturing are recorded separately, because they are often different places: a brand headquartered in one country frequently manufactures in another. Tabarnam lists what the catalog holds and marks the rest unknown. Entries come from public sources and may be incomplete or out of date — production moves.
